  • Vineyards Select vineyards are located on the hills surrounding Rome, in Frascati, Monteporzio Catone, Montecompatri and Grottaferrata, at an altitude between 200 and 400 meters. Soil is volcanic, rich in potassium and phosphorous.
  • Winemaking Fully ripened grapes are harvested mid-October and immediately cooled and left to macerate before pressing. Fermentation of 2-3 weeks is followed by a rest period of 4 months on fine yeasts at a low temperature. It is then racked and blended ready for bottling. The long period on the yeasts enriches the aroma and flavor.
