Winemaking
The grapes are handpicked from a one acre vineyard of vines over 100 years old and placed uncrushed into
small stainless steel open fermenters. Gentle basket pressing occurs in one single press. Aging takes place for 18 months in a combination of new (30%) and old (70%) French oak puncheons.
Tasting Notes
Color: Intense violet.
Bouquet: Delicious dense, spicy blueberry fruit with hints of licorice, plum and allspice.
Taste: These notes reappear on the palate with leather and savory notes. Silky with fine tannins
and outstanding length and balance.

Marries excellently with robust meats, and hearty pastas dishes.
