Creso 2011 Rosso Verona IGT

Almost too much of a good thing, the 2011 Creso is weighed down by the heat and the strength of the vintage. This IGT wine is comprised of 65% Corvina and 35% Cabernet but the process used to make the wine resembles that of “Ripasso.” Cabernet grapes are air-dried until they lose 30% of their water weight. Once the wine is pressed, it undergoes a second fermentation with fresh wine made form the Corvina grape. The bouquet shows dark cherry, spice and mesquite flavors. Drink 2014-2019.
