Vineyards
Organic vineyards in the Maipo Valley, Chile. The soil consists of sandy gravel and clay; medium depth with excellent drainage.
Winemaking
Grapes are hand harvested from special lots and fermented in stainless steel with select yeast. The wine is aged for 12 months in oak barrels (70%) and stainless steel tanks (30%). An additional 6 months of bottle age takes place prior to release.
Tasting Notes
Color: Deep ruby red.
Bouquet: Fresh cherries and chocolate.
Taste: Intense fruit flavors with tremendous volume and silky tannins; well balanced with a long, full finish.
Food Pairing
Novas Cabernet Sauvignon pairs excellently with grilled white or red meats such as pork chops or steaks, flavorful roasts and pasta.
