  • Vineyards Organic vineyards in the Maipo Valley, Chile. The soil consists of sandy gravel and clay; medium depth with excellent drainage.
  • Winemaking Grapes are hand harvested from special lots and fermented in stainless steel with select yeast. The wine is aged for 12 months in oak barrels (70%) and stainless steel tanks (30%). An additional 6 months of bottle age takes place prior to release.
  • Tasting Notes Color: Deep ruby red. Bouquet: Fresh cherries and chocolate. Taste: Intense fruit flavors with tremendous volume and silky tannins; well balanced with a long, full finish.
  • Food Pairing Novas Cabernet Sauvignon pairs excellently with grilled white or red meats such as pork chops or steaks, flavorful roasts and pasta.
